2000 Pax Syrah, Lauterbach Hill, Russian River Valley
The moment we crushed these grapes we knew that we had something special. It took the juice about five minutes of soaking until it was opaque purple-black. It Fermented, We drained it into barrels, and then we bottled it 12 months later, the hardest part of making this wine was keeping our thief out of the barrels. This is as pure an example of Syrah that you will find.

Tasting Note:
Tightly wound Blackberries, Blueberries & Violets dominate the nose while the licorice & white pepper play for second fiddle. In the mouth, voluptuous & precocious with layers of blackberry liqueur, chocolate covered blueberries & Nougat. Hints of mincemeat and smoke unravel in the long & concentrated finish.
