2004 Pax Syrah, Cuvée Keltie

This is what we think a California Syrah SHOULD taste like. This wine is all about the soil. Ripe intense fruit, full rich tannins, spice and a dominance of tertiary aromas & flavors are exactly what we are trying to capture in this wine. The best 100% whole cluster fermented lots of Alder Springs, Castelli-Knight Ranch, Griffin's Lair, Majik, Audelessa, and Kobler blended together to represent traditional winemaking and exceptional vineyards. The idea behind this wine is the "Hermitage Model" that is to say that it is a blend of many unique vineyard sites that once blended are more than just a sum of their parts. One for the cellar, but delicious now! This is the only wine we make that never sees new oak.

Tasting Note:
White pepper, mushroom duxelle, spearmint, iodine and pencil-lead dominate the aromas, while sweet crème de cassis and blackberries linger behind, you can actually smell just how huge this wine is. Chewy and full in the mouth w/ minty underbrush, tar and dried flower flavors. Sweet black and red fruits dominate this mouth-watering Syrah until the rich and spicy earth driven tannins begin to steal the finish. This is an Extremely full-bodied Syrah with excellent purity.
