2004 Pax Rosé
Our typical blend of Grenache & Syrah pressed as whole clusters and a quite a bit of saignée from all three of our Grenache sources. A serious word of warning for you, this wine is atypically dark and full bodied. It is delicious with a slight chill on it rather than being completely chilled. This wine will work beautifully with roasted chicken and young goat cheese. It really is more of a lighter bodied red wine than it is a Rosé, and needs to be treated as such. C'est la vie!

Tasting Note:
Strawberry soda, ruby-red grapefruit pulp, bread dough and white pepper on the effusive nose. In the mouth bright and lively, with ripe lush strawberry and raspberry fruit. The finish is clean and crisp, but the wine behaves more like a red wine than it does a real Rosé.
