The Pax Wine Cellars logo on this web site as well as on each of our labels is the image of “Pangea Ultima”. Pangea is the theoretic single landmass that all seven continents separated from 200 million years ago. We have chosen to use the image of Pangea Ultima, which is the theoretic single landmass that all seven continents partially reconnect as in another 200 million years. Our planet is made up of many distinct lands, each different in it’s soil, climate, elevation, Longitude, Latitude and influences, yet all separated from the same single piece of land.

It is our opinion that the most important element of wine growing is where the grapes are grown. Of course how they are grown and the planting material used are imperative for quality as well, but the site in which the grapes are grown overrides everything.

The Northern Rhone is undeniably a great “place” to grow Syrah, Australia is also making Syrah based wines of distinction and has been doing so for close to a century. The United States or even California may prove to be another great “place” for Syrah, from the central coast of California to the hills of Virginia; we are still working out the kinks.

We believe that the cooler climates along the northern coast of California have the potential to produce world-class Syrah, and that is our goal. We make every effort to insure that our wines reflect where they are grown. To mold our wines into any given style, that is indicative of another growing region rather than the one in which it was grown would be the biggest disservice we could ever do.
